Look up the word revelation.
Your theory only works if the Old Testament claims to be the full revelation of God.
Not even the New Testament is.

When we rest on the seventh day, we are supposed to understand that God created our world in 6 days and rested on the Seventh day and set apart that day and sanctified it for man ( the Son of Man is Lord even of the Sabbath)
