I have a Jehovah’s Witness friend in Melbourne and asked him this question.
Why did Jesus tell Mary not to touch him straight after he had risen?
My friend had to go back through 40 years of watchtower magazines (JW teaching/theology magazine) and could still not find the answer. I am certain of why I believe Jesus said it. I will tell later, But why do you all think he told Mary not to touch him?

That is a good question. My understanding is that He was wanting to ascend to the Father asap and was indicating that He wasn’t there to stay. He wanted her to relay that to His disciples to remind them of what He had told them in John 14:28.John 20:17
Jesus said to her, “Do not cling to me, for I have not yet ascended to the Father; but go to my brothers and say to them, ‘I am ascending to my Father and your Father, to my God and your God.’”
John 14:28

I can speculate that Marry was on her period and therefore her touch would be unclean to a Jew. Jesus was an observant Jew, who never violated even the least tenet of the Law of Moses; despite the accusations of the Pharisees.
The bottom line is Scripture does not tell us though those the letter was written to probably knew.

possibly, Jesus ascended to Heaven shortly after rising to enter the Holy of Holies keeping his blood pure as the High Priests in the OT had to be clean/washed, thus “touch me not; for I am not yet ascended to the Father: but go unto my brethren, and say to them, I ascend to my Father and your Father, and my God and your God. Hebrews 9:11, “he entered once for all into the holy places, not by means of the blood of goats and calves but by means of his own blood”. Hebrews, 9:23 “for Christ has entered, not into holy places made with hands, which are copies of the true things, but into heaven itself, now to appear in the presence of God on our behalf. Nor was it to offer himself repeatedly, as the high priest enters the holy places every year with blood not his own, for then he would have had to suffer repeatedly since the foundation of the world. But as it is, he has appeared once for all.”then, “after eight days His disciples were again inside, and Thomas with them. Jesus came, the doors having been shut, and stood in their midst and said, “Peace be with you.” Then He said to Thomas, “Reach here with your finger, and see My hands; and reach here your hand and put it into My side; and do not be unbelieving, but believing.”

So Jesus told her not to CLING TO him.
He did not want her to expect him to physically stay in their earthly presence.
He would return as the Spirit.

The lamb without blemish offered with the blood drained then burnt. One part of the law that few people know or pass over, no pun intended, is that if anyone had touched the offering other than the high priest the whole thing was null and void.
The answer is in the verse, “for I am not yet ascended to the Father”. to present the untouched sin offering to His Father. For the very same day Thomas put his hand/fingers in Jesus side and palms or wrists.
Which leads to another question, the resurrected body ,that means had then gone from physical to spiritual then back to physical. Then appeared to them in a locked room as physical. The question was asked before
Did the resurrected physical body of Jesus have blood?. Thinking that He went from physical to spiritual and back again.

He was raised in the same body that he was crucified in to fulfil scripture.
But the blood had been shed.
There is no suggestion that he had the new spiritual body before his resurrection.
His soul was alive in the Spirit.

That’s kinda “JW”-ish.
They believe the body was dissolved and re-created.
I believe Jesus’ body was not only resurrected, but also
transformed – perhaps added genetic coding of some sort.In more term: I believe he was physical alright; but he may also have
translucent and teleportation capabilities. And maybe the fish multiplication
story is applicable as well, meaning as light can be projected in more than one place
at the same time. Jesus may now be able to manifest himself as physical and non-physical._______________
