Here's a question: since God is omniscient, He knew Cain would kill Abel. That being the case, why didn't He just impregnate Eve, let Cain kill Abel, and be done with the whole scenario from the start?

Because some men held onto old forms of sacrifice while others progressed in their faith. Jesus being a blood sacrifice only appealed to the ones who had not progressed and still believed that God wanted to kill animals because of the goof ups of man. While you are at it, show me where there is one incidence of a sin offering that atones for sins that are AFTER the sacrifice. All sacrifices were made for prior sins. Thus, according to OT Law, Jesus would only (at best) be a sacrificial offering for those who preceded his death.
